Chanterelle mushrooms are wild edible fungi with funnel-shaped caps, varying in color from dark orange to yellow and white. They have a meaty firmness, a fruity aroma and a mild, peppery taste; they also contain antibacterial and antiviral properties. In the Pacific Northwest, chanterelles can be found from July to November in clusters in mossy coniferous forests, and also thrive in mountainous birch forests. Do not eat a mushroom you are not 100% sure you can identify!
